Arnaldus de Villanova ((Arnaud de Villeneuve); (* around 1235 with Valencia, Spain; "† 1311 on lake (shipwreck)) was an important scholastischer physician.

He was a physician of the king Aragon and professor of the university of Montpellier.

He discovered the Giftigkeit of Carbon monoxide and decaying meat and was author of numerous medical works, under it the "“manual of the entire medicine"” (Breviarium practicae). He discovered also the Mutage (stop the fermentation of wine by addition of alcohol or sulfur dioxide).
