Christiaan Eijkman (* 11 August 1858 in Nijkerk, the Netherlands; "† 5 November 1930 in Utrecht, the Netherlands) was a Netherlands public health specialist.

Eijkman proved 1897 that from feeding polished rice with chickens Beriberi results. These Vitamin B1-Mangeleffekt could be repaired by feeding the of the rice. Thus the Vitamin B1 (Thiamin) was discovered.

For its discovery of the antineuritischen Vitamins it kept 1929 common with Frederick Gowland Hopkins to the Nobelpreis for physiology or medicine.
