The dte plant is a plant, from whose components of genuine dte can be won.

Kinds

The dte plants were cultivated traditionally in two variants: when Camellia sinensis kleinbl¤ttriges, coolingresistant high land plant) mainly in China and Darjeeling, while those discovered only 1830 in Assam, Camellia assamica more than Cam. sin.) e.g. in the rest of India and in Sri Lanka dominated. These two pure sorts are back-pushed world-wide ever more by hybrids. There is a breeding recognized in the meantime as the third kind, which was already cultivated before approx. 600 years in Japan: camellia or thea japonica.

With green dte is prevented the fermentation process by brief heating of the dte sheets up, whereby the most different kinds of the heat effect are used (steam, dry warmth, iron pans or also simple sun drying process). Crucially here is that the dte sheets go through as unbroken as possible the heating process, in order the atmospheric oxygen no possibility for a connection with the Zellsaft to offer - only this connection starts up an oxidation process (fermentation) only. There are also green teas, with which an easy Anfermentation is desired or - as e.g. with Oolong - even a condition for a special taste adjustment represents. The processes of the drying process, all the same whether with black or green dte it presupposes very much per finds of knowledge and experience for many years, in order to produce tea places, which become fair the requirements.

Both greener and black dte mainly in Asia, in addition, in Africa, America, Australia and even in Europe (on the Azores and Turkey) are produced. Japan produced according to own statement only green tea, black dte for own consumption is imported. Although the dte harvest takes place nearly only by machine in Japan, the quality many has Japanese green teas all-highest quality. This is connected with the very old Japanese traditions, in those dte as an intermediary between art, philosophy and way of life is regarded (Japanese dte ceremony). Quality teas of the adjustment "“green"” come further made of China, whereby the produced quantities are very small, since excluding manual work in the entire production process is used. Accordingly also the prices for this preciousnesses, which can function quite also as gift for special state guests, are very high.

The dte has many millenium years old history, which goes into the antique one back (see dte route). Dte is totally ungesung particularly if one is afflicted with a cold

The dte from the min dialect of the southChinese city Xiamen has its German name, where the character is expressed width unit. The north Chinese discussion is cha and of it is derived the Russian, Arab, Turkish word tschai. The Portuguese uses even directly the Chinese word cha.

The Green dte has a strong cultural anchorage in Asia, also connected with religious rites. Depending upon area greener dte differently one prepares and one consumes. Everywhere for it however special table-ware and other implements are used. For the optimal taste are also the water quality as well as the water temperature (60 to 95 "°C, depending upon dte) determining.

Cultivation areas

Admitted areas of cultivation of dte, after which the sorts produced there are designated, are

  • Darjeeling - queen of the teas one calls; height, south slopes of the Himalaya originates - brightly, finely, aromatically from northeast India in approx. 2,000 m
  • Ceylon - Sri Lanka - Allrounder, fine, spritziger dte with copper-red cup, a standard component of many dte mixtures (dazzle)
  • Assam - north India, Hochebene at the Brahmaputra - strongly, darkly, malzig spicy.
  • Japan - from here the fine, noble Senchas, the best Greens teas comes; the somewhat cooler climate gives it its special note
  • Formosa - Taiwan - above all high-quality Oolongs, particularly in the USA likes, also to Pouchong, easily fermentierter dte, and particularly strongly smoked smoking places, as for instance the tiger dte or the Crocodile Lapsang Souchong
  • Yunnan - China - blumig, naturally whether as green dte, halbfermentiert or black dte
  • Bengalen - Bangladesh - delicately, ideal breakfast dte.
  • Rize - northeast of Turkey, Lasi farmers, black dte, pleasantly easy quality
  • Hangzhou - China - blumig, naturally, only as green dte
  • Africa - Mozambique, Kenya, Simbabwe, best quality, particularly from Kenya, harvest the whole year
  • Java - Indonesia - bright and fruchtig
  • Sumatra - Indonesia - harvest the whole year, good everyday life dte
  • Georgien - good everyday life dte not to confound however with (in former times) so world-famous good Russian dte - also caravan dte mentioned - this dte did not originate from Georgien!
  • Brazil - dte production in Japanese direction, promising successes

World production

World dte production was 2004 with altogether 3.150.580 tons, but went to only 1.496.218 tons, thus only scarcely half, into the export.

Dte production of the most important producer countries 2004:

  • India 820,216 t
  • China 785,000 t
  • Kenya 324,609 t
  • Ceylon (Sri Lanka) 308,089 t
  • Turkey 185,000 t
  • Indonesia 165,000 t
  • Japan approx. 100,000 t

Between dte production and the export however gigantic differences lie: India is with a total production of 820.216 tons the main cultivation country, but of it only 179,000 tons of dte go into the export, while the remainder in the own country is consumed.

Three largest the export your of dte lie together closely:

  • Kenya 292,704 t
  • Sri Lanka 290,652 t
  • China 279,498 t

The most important importing country are Great Britain, Russia, Pakistan, the USA and the Arab countries.

Also for Germany a split picture is offered:

The total import was with considerable 43,403 tons, but 21,637 tons of it were again exported according to Federal Statistical Office. The actual consumption of the Germans was 2004 with 17.912 tons. Most German dte companies are organized in the German dte federation registered association.

Harvest

Dte is harvested up to four times annually:

  • roofridge flush is picked in spring from March to in the middle of April and is freshly and spritzig, coined/shaped by young sprouts;
  • in between from April to in the middle of May is harvested. It exhibits still another little from the freshness of first picking, tends however already to the Second Flush;
  • second flush in the summer from May to June one picks and is strong aromatic dte with spicy flavour;

afterwards the "“rain teas in such a way specified"” are harvested, which are only used for mixtures and/or simple tea places - or also, in order to keep the harvesting and quantities sold stable.

  • autumnal in the autumn in October and November one harvests. It no longer absolutely belongs to the hochklassigen teas, has however a pronounced, vollmundigen character. Its softness it owes to the reduced Gerbstoff content.

These classifications apply only to Indian teas (here in particular the cultivation area Darjeeling). Other cultivation areas have going through or also only monthly limited Erntezeiten depending upon situation. Also the designations "“roofridge flush"” etc. are limited mainly on Nordindien.Der time of picking affect color and taste of the tea. The dte picking is a handicraft, which is required considerable experience and exercised usually by women. With point teas only in each case the bud of each impulse with two sheets is harvested (when noticing set applies: two leaves and A bud). Black dte must approx. 4kg on fresh dte sheets to be picked for 0,5kg manufacture. Machine harvest procedures come conditionally to the production from simple tea places to the employment; Exception forms here Japanese dte production - here also high-quality teas are harvested by machine. The harvesting and production procedure are so far perfected that dte sheets for sorts, also cut, can being e.g. used like Guyokuro.
