Gabriel Gustav Valentin (* 8. July 1810 in Breslau; "† 24. May 1883 in Berne) was a German physician and physiologist.

Gabriel Gustav Valentin studied medicine in Breslau starting from 1828 where it also as a physician established itself. 1836 it followed a call as a professor of the physiology to Berne, where it worked up to its death 1883. Valentin has itself by innovative investigations particularly earned made around the physiology of digesting and the metabolism (the active muscle).
