The milk quality regulation is a regulation, which regulates the quality test and the payment of the cow's milk, which is supplied at dairies in Germany.

The highest Land authorities have the right to put and/or increase further characteristics and the frequency of the investigation firmly. In many cases the investigation frequency is prescribed more highly than legally. Voluntarily also further characteristics are examined like e.g. the urea content in the context of the milk production sample or after certain pollutants.

For the germ content the computation of the geometrical means from the test results of the last two months (for each month of 3 values) takes place. A condition are per month at least two investigations.

Besides the milk quality regulation that only milk may be delivered by cows with a daily milk production of at least 2 litres, of cows with diseases does not determine at all in particular at the sex organs.

Classification and payment

The milk is classified under two grades (1 and 2). The dairy can insert additionally still another further grade, the S-Klasse.Der limit value in the S-class for the germs amounts to <75.000 ever ml and the cell content may 350,000 ever ml not exceed. The payment is with the grade 1 at the highest, for the S-class gives it an addition by the dairy is determined again.

Deviations of the fat and protein content of the delivered milk of the farmer from the monthly average of the entire milk delivered to the dairy are to be considered by and anticipated payments on the base price. Basis is here a fat content of 3,7% and a protein content of 3,4%.

In the year 2001 over 97% of the milk under grade 1 and 48% of the cell numbers were classified lay on the average between 125.000 and 249.000.

An excess of the limit values leads when repetition to the blockage of the milk collection. With it the geometrical means is crucial over three months. Before however the farmer is advised and its production is examined for weak points.

Meaning of the characteristics

The measurement of the freezing point makes a statement possible about whether water was added to the milk (then the freezing point would lie over -0,515 "°C). Due to continuous controls today such falsifications occur hardly more. There is however also further the possibility that by incorrect cleaning water arrives to the milking installation into the milk.

The germ content of the milk informs about cleanliness during the dairy-farming and - to storage.

Control for restrictors is for the dairy of importance, since it can concern here antibiotics, which obstruct the subsequent treatment of the milk to yogurt or cheese. With positive result the entire milk collection car is excluded from the delivery. In order to avoid this, farmers let the milk of antibiotic-treated cows on restrictor occurrences examine, before this is supplied to the dairies. This offers additionally for keeping the waiting periods of medicines a security for farmers and dairies.
